Comparison of Physicochemical, Binding, and Antioxidant Properties of Chitosans Prepared from Squid Pens Dried by Three Different Methods

Abstract

|
Physicochemical, binding, and antioxidant properties of chitosans (designated as RT-chitosan, SD-chitosan, and OD-chitosan, respectively) prepared from squid pens dried by three different methods (room temperature drying, sun drying, and oven drying) were evaluated. Nitrogen and ash contents of three chitosans were not affected by drying methods of squid pens. However, RTchitosan had higher degree of deacetylation, dye-binding capacity, and DPPH radical scavenging activity, but lower viscosity and color a* (redness) value than SD-chitosan and OD-chitosan. OD-chitosan exhibited higher viscosity, color a (redness) value, water-binding capacity, and fat-binding capacity compared with RT-chitosan and SD-chitosan.
